Terroir
Sandy terroir over deep gravel, bringing finesse, aromatic brightness and freshness.
Winemaking
Traditional, aroma-driven winemaking: 6-hour skin contact before pressing with inert (oxygen-protected) presses to enhance aromatics. 15-day cold settling at 0°C, with daily lees resuspension to release aromatic precursors and build texture. After clarification, fermentation at 18°C to preserve freshness. Lees are filtered and reintegrated into the corresponding must, as they are highly aromatic.
Ageing
Stainless-steel ageing, complemented by partial ageing for 8 months in new French oak barrels to add complexity.

This wine has a beautiful pale yellow color with green highlights.
At nose
The nose is expressive and reveals aromas of white-fleshed fruits.
On the palate
Complex, delicate palate, well-balanced between floral notes and oak-derived flavours reminiscent of coconut and vanilla. Fresh, lively finish with good length.

Enjoy with fish in sauce (sole, sea bass, trout), salmon–avocado maki, and goat’s cheese.
