Location
This 100% Cabernet Sauvignon is produced from vines near Six Chemins, in the communes of Saugon and Saint-Christoly. The vines are planted on deep gravel terroirs with excellent water balance, which ensures perfectly ripe grapes, resulting in powerful and well-structured wines.
Winemaking
Classic winemaking. Pre-fermentation cold maceration. Alcoholic fermentation in temperature-controlled stainless steel tanks, followed by post-fermentation maceration with rack and return.
Ageing
After a maceration of about thirty days, the wine is racked and put into French oak barrels (100% new wood) for aging over a period of 16 months.

Visual appearance
Beautiful, deep, ruby-red colour.
At nose
The bouquet is very expressive, with hints of blackcurrant and liquorice.
On the palate
Starts out incredibly aromatic on the palate, featuring notes of black fruit, violet and raspberry. This wine has a lovely long aftertaste and good structure, with oaky aromas reminiscent of mocha. Enjoyable now and over the next 8 years.
Food pairings
This wine pairs beautifully with bavette steak, duck confit, or herb vegetable croquettes, and also goes very well with aged cheeses such as Comté or Mimolette.
